Recipe - Susan's Suggestions

From ST-KA member Susan Hirsch...

 Chicken Diablo

1 whole chicken (Can use split breasts and /or thighs)

4 tablespoons butter

1/2 cup honey

1/4 cup Dijon or brown mustard

1 teaspoon salt

1 teaspoon curry powder 

Melt butter in a shallow pan.  Stir in remaining ingredients.  Roll chicken in butter mixture and bake, meaty side up. 

Bake at 325 degrees uncovered for 1 hour

Noodle Kugel

1 pkg. wide egg noodles (8 oz)

4 beaten eggs

4 tablespoons melted butter or margarine 

3/4 cup sugar

3/4 cup white raisins

1 jar (15 oz.) unsweetened applesauce 

Mix all ingredients except noodles; fold in noodles.  Sprinkle topping (see below) over noodle mixture and bake 35 minutes at 375 degrees.

Bake in a buttered 7 1/2 x 11 1/2 dish.

     Topping

     1/2 cup graham cracker crumbs

     2 tablespoons sugar

     1/2 teaspoon cinnamon

I usually double the recipe and bake for 45 minutes in a 9 x 13 dish.  The topping is enough for the doubled recipe.

Old Fashioned Apple Crisp

6 medium (6 cups) tart cooking apples*, peeled, cored and sliced 

3/4 cup firmly packed brown sugar

3/4 cup old-fashioned oats

1/2 cup all-purpose flour

1 teaspoon cinnamon

1/2 cup cold butter

Preheat oven to 375 degrees.  Place apples into un-greased 8-inch square baking dish.  

Combine brown sugar, oats, flour and cinnamon in a bowl; cut in butter with a pastry blender or fork until mixture resembles coarse crumbs.

Sprinkle crumb mixture over apples.  Bake 25-35 minutes or until apples are tender and topping is golden brown.

Serve warm with ice cream, if desired.

*Suggest Granny Smith, McIntosh or Braeburn apples.  

Mandel Bread

1 cup sugar

4 cups of flour

1 cup vegetable oil

3 eggs

3 Tablespoons orange juice

2 heaping teaspoons baking powder

(chopped nuts or chocolate chips optional)

Place all ingredients in a bowl and mix well until dough is sticky.  Form 2 to 3 rolls and place on parchment paper.

Bake 30-40 minutes at 350 degrees.

Cool for 10 minutes; then slice on a diagonal.  sprinkle with cinnamon sugar and bake on its side for 7 minutes. 

Sprinkle the other side with cinnamon sugar and bake another 7 minutes

Brisket

Cut up potatoes, carrots and celery.

Put them in a roasting pan with a brisket.

Pour your favorite barbeque sauce on top and cook, covered until tender.

You can also do this with chicken instead of brisket.
